Head Butcher Job in Kampala - Pre-Opening Team at Marriott Hotel
Job Description
Marriott International is seeking an experienced Head Butcher to join the pre-opening team for the new Marriott Hotel in Kampala, Uganda. This is a senior culinary leadership role perfect for a skilled professional looking to build a butchery department from the ground up at a world-class hotel.
As the Head Butcher, you will be responsible for establishing all butchery operations, ensuring the highest standards of meat preparation, quality control, and food safety. You will play a crucial role in shaping the culinary foundation of this prestigious new hotel on Ggaba Road, Nsambya.
Key Responsibilities:
β’ Lead and manage all butchery operations for the hotel's pre-opening and ongoing service.
β’ Establish standard operating procedures for meat receiving, storage, preparation, and portioning.
β’ Ensure strict adherence to Ugandan food safety standards and Marriott's global quality protocols.
β’ Train and supervise butchery team members in proper cutting techniques and safety procedures.
β’ Control inventory, minimise waste, and manage butchery costs effectively.
β’ Work closely with Executive Chef and kitchen leadership to plan menus and meet specifications.
β’ Source and select high-quality local and imported meats, building relationships with suppliers.
β’ Maintain impeccable hygiene and sanitation standards in all butchery areas.
Requirements & Qualifications:
β’ Proven experience as a Head Butcher or Senior Butcher in a 4 or 5-star hotel or high-volume restaurant.
β’ Extensive knowledge of meat cuts, ageing processes, and butchery techniques for beef, poultry, lamb, and pork.
β’ Strong leadership skills with experience training and managing a team.
β’ Excellent understanding of HACCP and food safety management systems.
β’ Certificate or diploma in Food Production, Butchery, or related field is preferred.
β’ Ability to work under pressure in a fast-paced pre-opening environment.
β’ Strong communication skills in English; knowledge of local languages is an advantage.
