Head Baker Job in Kampala - Pre-Opening Team at Marriott Hotel
Job Description
Marriott International is seeking an experienced and creative Head Baker to join the pre-opening team for the new Marriott Hotel in Kampala, Uganda. This is a fantastic opportunity to build a bakery department from the ground up and set the standard for culinary excellence at one of the world's most prestigious hotel brands.
As the Head Baker, you will be responsible for leading all bakery operations, developing menus, and training a team to deliver exceptional breads, pastries, and desserts. You will play a key role in shaping the guest dining experience from day one.
Key Responsibilities:
β’ Lead and manage all aspects of the hotel's bakery and pastry kitchen.
β’ Develop and standardise recipes for breads, pastries, desserts, and baked goods.
β’ Source high-quality local ingredients and manage inventory and cost control.
β’ Recruit, train, and supervise a team of bakers and pastry assistants.
β’ Ensure all products meet Marriott's international standards for quality, presentation, and taste.
β’ Maintain strict hygiene, sanitation, and food safety standards (HACCP).
β’ Collaborate with the Executive Chef to create cohesive menus for all hotel outlets.
β’ Manage the bakery budget, including labour and food costs.
Requirements & Qualifications:
β’ Proven experience as a Head Baker, Pastry Chef, or similar leadership role in a 4/5-star hotel or high-end bakery.
β’ Formal culinary training or apprenticeship in bakery and pastry arts is preferred.
β’ Strong knowledge of bread fermentation, pastry techniques, and dessert presentation.
β’ Excellent leadership, training, and team management skills.
β’ Ability to work under pressure in a fast-paced, pre-opening environment.
β’ Creative flair and passion for developing new products.
β’ Commitment to high standards of quality and cleanliness.
